Ingredients
1 medium sweet potato, diced
2 eggs
1–2 tbsp feta cheese, crumbled
Olive oil
Seasonings: salt (optional), pepper, garlic powder, and paprika
Optional: Red pepper flakes and fresh herbs
Preparation
Roast: Toss diced sweet potatoes in olive oil, brown sugar, nutmeg, and cinnamon. Roast at 375°F for 30-40 minutes or until fork tender .
Cook Eggs: Prepare eggs your favorite way (fried or basted is recommended).
Assemble: Plate the roasted potatoes, top with the eggs, and finish with crumbled feta, herbs, and red pepper flakes.
