About the Recipe

Ingredients

  • 1 medium sweet potato, diced

  • 2 eggs

  • 1–2 tbsp feta cheese, crumbled

  • Olive oil

  • Seasonings: salt (optional), pepper, garlic powder, and paprika

  • Optional: Red pepper flakes and fresh herbs

Preparation


  1. Roast: Toss diced sweet potatoes in olive oil, brown sugar, nutmeg, and cinnamon. Roast at 375°F for 30-40 minutes or until fork tender .

  2. Cook Eggs: Prepare eggs your favorite way (fried or basted is recommended).

  3. Assemble: Plate the roasted potatoes, top with the eggs, and finish with crumbled feta, herbs, and red pepper flakes.
