Ingredients
1 cup greek yogurt
1 cup granulated sugar
3 large eggs
1/2 cup butter, melted
2 tsp almond extract
11/2 cups gluten-free all purpose flour
2 tsp baking powder
1/4 tsp salt
1 cup strawberries, diced
For the strawberry glaze:
1 cup powdered sugar
3-4 strawberries, mashed
Preparation

—In a large bowl, combine your Greek yogurt, sugar, eggs, melted butter, & almond extract.
Mix well.

Add your sifted flour, baking powder, & salt to the batter, mixing well. Fold in your diced strawberries.
Pour batter into a parchment paper lined 9x5 loaf tin. Bake @ 350 degrees for roughly
50 minutes, or until a toothpick inserted comes out clean. *LOOSELY cover with a piece of tinfoil for the last ~20 minutes to prevent burning. Remove loaf & let cool.
—Prepare the strawberry glaze by mashing your strawberries into a small bowl until there is primarily juice and minimal solid strawberries left. Mix strawberry juice with powdered sugar until a thick glaze has formed, then pour over top of cake. Slice & enjoy!
