About the Recipe

Ingredients
2 ripe bananas (super spotty = sweeter, softer muffins)
1 cup homemade oat flour (blended VERY fine)
1/2 cup vanilla Greek yogurt
2 eggs
1/4 cup maple syrup or sugar-free syrup
2–4 tbsp milk (almond, regular, whatever you got) ← important fix
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1 tsp vanilla extract
Pinch of salt
1 scoop vanilla protein powder
1/4 cup of chocolate chips
Preparation
Preheat oven to 350°F
Blend oats until super fine flour or use pre-made oat flour
Mash bananas smooth
Mix in eggs, yogurt, syrup, vanilla
Add dry ingredients and stir gently
Add 2–4 tbsp milk until batter looks like thick pancake batter
Let batter sit 5–10 minutes ← THIS is what fixes oat flour texture
Scoop into muffin tin
Bake 18–22 mins
